So I'm looking to turn my diet completely plantbased, but between working from home, looking after my two year old and being pregnant with my second bub, I'm usually pretty exhausted at the end of the day. I'm looking for quick and easy meals that I can whip up once a week and throw in the freezer, so I'm hoping someone can help me out! :) x

Thank you for your question! I have a few suggestions for you to include more plant based meals into your diet. Being pregnant it is important you nourish your body correctly. Include fresh fruits especially avocados (natural source of folate which is essential in pregnancy) and even lightly steamed veggies (such as broccoli, green beans, asparagus, carrots) where possible. I would suggest having a green smoothie with raw organic leafy greens, berries, bananas, chia seeds and hemp seeds in the morning and try cooking meals like lentil soup, risotto, vegan potato and chickpea curry, lentils and rice (which a great to freeze). Making overnight chia oats is also a great way to "get up and go" in the morning too, you just add your choice of fruit, nuts, berries or organic granola in the morning! Some more simple meals and dips like tahini, kale pesto and hummus, can stay in the fridge for up to 7 days and taste delicious over salads! I hope this helps!
