1/3 cup cashews
3 pitted medjool dates
1 + 1/3 cups boiling water
2 TBS chia seeds
1 tsp vanilla extract
Pinch of cinnamon
Place the cashews & dates in a plastic bowl. Tip the boiling water over the cashews & dates & leave to soak for 30 minutes.
Transfer the cashews, dates & boiling water into a blender & blitz.
Add the chia seeds, vanilla extract & cinnamon to a plastic container. Pour in the blended cashew & date milk, stir & keep in the fridge for up to a week.
