3 large red capsicums
140g of nuts (walnuts or peanuts are yummy!)
1 clove of garlic
2 TBS olive oil
Zest of 1 grated lemon
½ lemon juiced
1 tsp ground cumin
½ tsp smoked paprika
Pinch of cayenne pepper
½ tsp salt
Wash & rub the red peppers with olive oil. Place them on a baking tray & bake in the oven at 200 degrees for 30 – 40 minutes.
Once baked, transfer to a plastic bowl & cover with glad wrap. Leave for about 10 minutes. This will soften them even further.
Peel off the skin & remove the core.
Place the peppers & the rest of the ingredients in a blender & blitz.
