    Tomato Relish

    Makes approx. 2x medium size jars


    1kg tomatoes, diced

    1 large onion, diced

    ½ TBS salt

    ½ TBS curry powder

    ½ TBS mustard powder

    ½ tsp chilli flakes

    ½ cup malt vinegar

    ½ cup white sugar


    Place the tomatoes & onion in a large plastic container & sprinkle with the salt.


    Leave to sit for at least 4 hours, up to 12 hours.


    Strain off after 4 to 12 hours & place into a large saucepan with the curry powder, mustard powder, chilli flakes & malt vinegar.


    Bring to the boil & boil for 15 minutes.


    Stir in the sugar & reduce the heat to simmer. Simmer for 1 hour + 15 minutes.


    Remove from the heat & pour into sterilized glass jars whilst hot.


    Wait for the relish to cool down before adding the jar lid & store in the fridge - the relish will last for months in sealed jars.


    Tip: Best served cold! Enjoy with hand cut chips, in a burger or on a cracker.
